A great alternative to beef rump! It's cut from the backside of the lamb providing a tender and juicy steak. The lovely layer of fat can be crisped in a pan for full flavour and a great tender piece of meat!
We recommend cooking this one a bit longer – around five minutes each side (depending on size). Best cooked medium.
The best way to cook this steak is to use the reverse sear method. Season your steak with a marinade and olive oil and then cook in the oven for around 20 minutes on 140c heat. Take it out of the oven and then pan fry it to crisp the fat and sear all sides to lock in the flavour!
